Ingredients

  • 2 cloves garlic, minced

  • 2 cups chicken broth
  • 1 cup frozen mixed vegetables
  • 1/2 cup shredded cheddar cheese


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken with salt and pepper.
  3. Cook chicken until browned, about 5 minutes.
  4. Add onion and garlic; cook until softened, about 3 minutes.
  5. Stir in rice and chicken broth. Bring to a boil.
  6. Reduce heat, cover, and simmer for 15 minutes.
  7. Stir in frozen vegetables.
  8. Top with cheese; cover and cook until cheese is melted, about 2 minutes.
