- 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1 cup uncooked white rice
- 2 cups chicken broth
- 2 cups broccoli florets
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces and cook until browned on all sides, about 5-7 minutes.
- Stir in garlic powder, onion powder, black pepper, and salt.
- Add rice and chicken broth to the skillet. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Stir in broccoli florets. Cover and cook for another 5-7 minutes, or until rice is tender and broccoli is crisp-tender.
- If desired, sprinkle with shredded cheddar cheese before serving.
Notes
