Description
This 30-minute high-protein chicken spinach orzo skillet is a quick and satisfying meal. It features tender chicken, healthy spinach, and orzo pasta, all cooked in one pan for easy cleanup.

- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 3 cups chicken broth
- 5 oz fresh spinach
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until browned, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 3-5 minutes. Add garlic and cook for 1 minute more.
- Stir in orzo pasta and chicken broth. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-12 minutes, or until orzo is tender and most of the liquid is absorbed.
- Stir in spinach and cooked chicken. Cook until spinach is wilted, about 2-3 minutes.
- Remove from heat, stir in Parmesan cheese, and serve immediately.
Notes
- For extra flavor, you can add a pinch of red pepper flakes with the garlic.
- Feel free to add other vegetables like bell peppers or cherry tomatoes.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
