Ingredients

  • 1 tbsp olive oil
  • 1 lb shrimp, peeled and deveined
  • 1 tbsp Cajun seasoning
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper (any color)
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 8 oz pasta (fettuccine or linguine recommended)
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish


Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat.
  3. Season shrimp with Cajun seasoning. Add shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Remove shrimp from skillet and set aside.
  4. Add onion and bell pepper to the same skillet. Cook for 3-5 minutes, until softened.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  7. Stir in heavy cream and Parmesan cheese. Bring to a gentle simmer and cook for 2-3 minutes, until the sauce thickens slightly.
  8. Return cooked shrimp to the skillet with the sauce.
  9. Add cooked pasta to the skillet and toss to combine, ensuring the pasta is well coated with the sauce.
  10. Season with salt and pepper to taste.
  11. Garnish with fresh parsley before serving.

  • For a richer flavor, use seafood broth instead of chicken broth.
