Description
This quick and easy 30-minute high-protein creamy chicken mushroom skillet is perfect for a weeknight dinner. It is packed with flavor and nutrients.

- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 8 oz cremini mushrooms, sliced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp dried thyme
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add sliced mushrooms to the skillet and cook until softened and lightly browned, about 5-7 minutes.
- Stir in minced garlic and dried thyme, and cook for 1 minute until fragrant.
- Pour in chicken broth and heavy cream. Bring to a simmer, then reduce heat to low and cook for 5 minutes, stirring occasionally, until the sauce thickens slightly.
- Stir in Parmesan cheese until melted and smooth.
- Return cooked chicken to the skillet and toss to coat in the creamy sauce. Season with salt and black pepper to taste.
- Garnish with fresh parsley, if desired, and serve immediately.
Notes
- For a richer flavor, use full-fat heavy cream.
- You can substitute cremini mushrooms with white button mushrooms or a mix of your favorite mushrooms.
- Serve this dish over pasta, rice, mashed potatoes, or with a side of steamed vegetables.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
