Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 8-inch round cake pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream together butter and sugar until light and fluffy.
- Beat in egg, lemon zest, and lemon juice.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Gently fold in blueberries.
- Pour batter into prepared pan.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool completely before dusting with powdered sugar (optional).
Notes
- You can use frozen blueberries; do not thaw them first.
