Description

Ingredients

  • 1 lb beef sirloin, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 red bell pepper, chopped
  • 1 cup beef broth
  • 1 tsp dried thyme
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss beef with olive oil, salt, and pepper.
  3. Place beef and vegetables in a large oven-safe pan.
  4. Pour in beef broth and sprinkle with thyme.
  5. Cover and bake for 30 minutes.
  6. Uncover and bake for another 15 minutes, or until beef is tender.
