Ingredients

- 1 lb beef sirloin, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 red bell pepper, chopped
- 1 cup beef broth
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss beef with olive oil, salt, and pepper.
- Place beef and vegetables in a large oven-safe pan.
- Pour in beef broth and sprinkle with thyme.
- Cover and bake for 30 minutes.
- Uncover and bake for another 15 minutes, or until beef is tender.

- Serve with a side of mashed potatoes or rice.
