- 1 pound dried black eyed peas
- 6 cups chicken broth
- 1/2 cup chopped yellow onion
- 1/4 cup chopped celery
- 1/4 cup chopped green bell pepper
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup heavy cream
- 2 tablespoons butter
Instructions
- Rinse the black eyed peas.
- Combine peas, chicken broth, onion, celery, bell pepper, garlic, salt, and pepper in a large pot.
- Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until peas are tender.
- Stir in heavy cream and butter.
- Cook for another 5 minutes until heated through and creamy.
- Taste and adjust seasoning if needed.
Notes
- For a smoky flavor, add a ham hock or bacon to the pot while simmering.
- Adjust the amount of cream to reach your desired consistency.
- Serve hot as a side dish.
