- 1 pre-made pie crust
- 4 cups fresh blackberries
- 1/2 cup lemon juice
- 1 cup sugar
- 1/4 cup cornstarch
- 1/4 cup water
- 1 tablespoon lemon zest
Instructions
- Preheat oven to 375°F (190°C).
- In a saucepan, combine blackberries, lemon juice, sugar, cornstarch, and water.
- Cook over medium heat, stirring until thickened.
- Remove from heat and stir in lemon zest.
- Pour blackberry mixture into the pie crust.
- Bake for 45-50 minutes.
- Let cool completely before serving.
Notes
- You can use frozen blackberries.
- Add a dollop of whipped cream before serving.
