Description

A quick and easy one-pan Cajun sausage and rice skillet dinner ready in just 30 minutes. It’s packed with flavor and perfect for a weeknight meal.


Ingredients

  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups uncooked long-grain rice
  • 3 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • Optional: chopped green onions for garnish


Instructions

  1. In a large skillet, brown the sausage over medium-high heat.
  2. Add the onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  3. Stir in the garlic, Cajun seasoning, salt, and pepper. Cook for 1 minute more.
  4. Add the rice, chicken broth, and diced tomatoes to the skillet. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Fluff with a fork and garnish with green onions, if desired.

Notes

  • You can substitute the sausage with chicken or turkey sausage.
  • Add a pinch of cayenne pepper for extra heat.
  • Serve with a side salad for a complete meal.
