Description
A quick and easy one-pan Cajun sausage and rice skillet dinner ready in just 30 minutes. It’s packed with flavor and perfect for a weeknight meal.

- 1 pound smoked sausage, sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups uncooked long-grain rice
- 3 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- Optional: chopped green onions for garnish
Instructions
- In a large skillet, brown the sausage over medium-high heat.
- Add the onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Stir in the garlic, Cajun seasoning, salt, and pepper. Cook for 1 minute more.
- Add the rice, chicken broth, and diced tomatoes to the skillet. Bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff with a fork and garnish with green onions, if desired.
Notes
- You can substitute the sausage with chicken or turkey sausage.
- Add a pinch of cayenne pepper for extra heat.
- Serve with a side salad for a complete meal.
