Description

Easy and delicious caramel apple cheesecake bars with a graham cracker crust. A perfect fall dessert.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 cups chopped apples
  • 1/2 cup caramel sauce


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, combine graham cracker crumbs and 1/4 cup sugar. Stir in melted butter until well combined. Press mixture evenly into the bottom of the prepared pan.
  3. Bake crust for 8-10 minutes, or until lightly golden. Remove from oven and let cool slightly.
  4. In a large bowl, beat cream cheese and 3/4 cup sugar until smooth.
  5. Beat in eggs one at a time, then stir in vanilla extract, cinnamon, and nutmeg.
  6. Pour half of the cream cheese mixture over the crust.
  7. Spread chopped apples evenly over the cream cheese layer.
  8. Drizzle half of the caramel sauce over the apples.
  9. Gently spoon the remaining cream cheese mixture over the apples and caramel.
  10. Drizzle the remaining caramel sauce over the top.
  11. Bake for 30-35 minutes, or until the edges are set and the center is almost set.
  12. Let cool completely in the pan on a wire rack.
  13. Chill for at least 2 hours before cutting into bars.

Notes

  • For a richer caramel flavor, use homemade caramel sauce.
  • If you don’t have graham crackers, you can use crushed digestive biscuits or shortbread cookies for the crust.
  • Ensure cream cheese and eggs are at room temperature for a smoother batter.
