Description
Easy and delicious caramel apple cheesecake bars with a graham cracker crust. A perfect fall dessert.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 cups chopped apples
- 1/2 cup caramel sauce
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, combine graham cracker crumbs and 1/4 cup sugar. Stir in melted butter until well combined. Press mixture evenly into the bottom of the prepared pan.
- Bake crust for 8-10 minutes, or until lightly golden. Remove from oven and let cool slightly.
- In a large bowl, beat cream cheese and 3/4 cup sugar until smooth.
- Beat in eggs one at a time, then stir in vanilla extract, cinnamon, and nutmeg.
- Pour half of the cream cheese mixture over the crust.
- Spread chopped apples evenly over the cream cheese layer.
- Drizzle half of the caramel sauce over the apples.
- Gently spoon the remaining cream cheese mixture over the apples and caramel.
- Drizzle the remaining caramel sauce over the top.
- Bake for 30-35 minutes, or until the edges are set and the center is almost set.
- Let cool completely in the pan on a wire rack.
- Chill for at least 2 hours before cutting into bars.
Notes
- For a richer caramel flavor, use homemade caramel sauce.
- If you don’t have graham crackers, you can use crushed digestive biscuits or shortbread cookies for the crust.
- Ensure cream cheese and eggs are at room temperature for a smoother batter.
