A simple and delicious one-dish dinner featuring chicken, rice, and cheese.

- 1.5 lbs boneless, skinless chicken breasts, cubed
- 1 cup uncooked long-grain rice
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1 cup chicken broth
- 1 cup milk
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a 9×13 inch baking dish, combine chicken, rice, cream of chicken soup, cream of mushroom soup, chicken broth, milk, salt, and pepper.
- Stir well to combine.
- Cover the dish with foil.
- Bake for 45 minutes.
- Remove foil, stir, and sprinkle with cheese.
- Bake uncovered for another 15 minutes, or until rice is tender and cheese is melted and bubbly.
- Let stand for a few minutes before serving.
Notes
- You can substitute other cheeses, like Monterey Jack or Colby.
- Add vegetables like peas or carrots for extra nutrients.
- For a crispier top, broil for a minute or two at the end.
