Description

A simple and delicious one-dish dinner featuring chicken, rice, and cheese.


Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cubed
  • 1 cup uncooked long-grain rice
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a 9×13 inch baking dish, combine chicken, rice, cream of chicken soup, cream of mushroom soup, chicken broth, milk, salt, and pepper.
  3. Stir well to combine.
  4. Cover the dish with foil.
  5. Bake for 45 minutes.
  6. Remove foil, stir, and sprinkle with cheese.
  7. Bake uncovered for another 15 minutes, or until rice is tender and cheese is melted and bubbly.
  8. Let stand for a few minutes before serving.

Notes

  • You can substitute other cheeses, like Monterey Jack or Colby.
  • Add vegetables like peas or carrots for extra nutrients.
  • For a crispier top, broil for a minute or two at the end.
