Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup milk
  • 8 oz cream cheese, softened
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: 1 cup frozen peas


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut chicken into bite-sized pieces. Season with salt and pepper.
  3. Heat olive oil in a skillet. Cook chicken until browned.
  4. Add onion and garlic. Cook until softened.
  5. Stir in rice and cook for 1 minute.
  6. Pour in chicken broth and bring to a boil.
  7. Reduce heat and simmer for 15 minutes, or until rice is almost cooked.
  8. Stir in milk, cream cheese, and half of the cheddar cheese.
  9. If using peas, add them now.
  10. Transfer mixture to a baking dish. Top with remaining cheddar cheese.
  11. Bake for 20-25 minutes, or until cheese is melted and bubbly.
