A comforting Cheesy Chicken and Rice Bake recipe. It’s a family-friendly meal.
Ingredients

- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup milk
- 8 oz cream cheese, softened
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Optional: 1 cup frozen peas
Instructions
- Preheat oven to 375°F (190°C).
- Cut chicken into bite-sized pieces. Season with salt and pepper.
- Heat olive oil in a skillet. Cook chicken until browned.
- Add onion and garlic. Cook until softened.
- Stir in rice and cook for 1 minute.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer for 15 minutes, or until rice is almost cooked.
- Stir in milk, cream cheese, and half of the cheddar cheese.
- If using peas, add them now.
- Transfer mixture to a baking dish. Top with remaining cheddar cheese.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
Notes
- You can use different types of cheese.
- Add vegetables like broccoli or carrots.
- Leftovers are great the next day.
