- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 4 cups vegetable broth
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a pot.
- Sauté onion until softened. Add garlic and cook briefly.
- Stir in orzo and toast for a minute.
- Pour in vegetable broth. Bring to a boil, then reduce heat and simmer until orzo is cooked (about 12-15 minutes).
- Stir in heavy cream and cheddar cheese until melted and smooth.
- Season with salt and pepper.
- Garnish with fresh parsley.
