Description

A comforting casserole with ground beef, rice, and cheese.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 (10 ounce) can diced tomatoes, undrained
  • 2 cups shredded cheddar cheese


Instructions

  1. Brown ground beef in a skillet. Drain any grease.
  2. Add onion and garlic. Cook until softened.
  3. Season with salt and pepper.
  4. Stir in uncooked rice, beef broth, and diced tomatoes.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes, or until rice is cooked.
  6. Stir in half of the cheese.
  7. Top with remaining cheese.
  8. Bake at 350°F (175°C) for 15 minutes, or until cheese is melted and bubbly.
