A comforting casserole with ground beef, rice, and cheese.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup uncooked rice
- 2 cups beef broth
- 1 (10 ounce) can diced tomatoes, undrained
- 2 cups shredded cheddar cheese
Instructions
- Brown ground beef in a skillet. Drain any grease.
- Add onion and garlic. Cook until softened.
- Season with salt and pepper.
- Stir in uncooked rice, beef broth, and diced tomatoes.
- Bring to a boil, then reduce heat and simmer for 20 minutes, or until rice is cooked.
- Stir in half of the cheese.
- Top with remaining cheese.
- Bake at 350°F (175°C) for 15 minutes, or until cheese is melted and bubbly.
Notes
- You can add other vegetables, like bell peppers or mushrooms.
- Use different types of cheese.
- For a spicier casserole, add a pinch of red pepper flakes.
