Description
This Cheesy Taco Pasta is a quick and easy weeknight meal.
Ingredients

- 1 pound pasta
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup water
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 2 cups shredded cheddar cheese
- Optional toppings: sour cream, salsa, avocado
Instructions
- Cook pasta according to package directions.
- Brown ground beef in a skillet. Drain any grease.
- Stir in taco seasoning and water. Simmer for 5 minutes.
- Add black beans, corn, and diced tomatoes. Cook for 5 minutes.
- Stir in cooked pasta and 1 cup of cheese.
- Top with remaining cheese. Cook until cheese is melted.
- Serve with your favorite toppings.
Notes
- You can substitute ground turkey or chicken.
- Add other vegetables like bell peppers or onions.
- Adjust the amount of taco seasoning to your taste.
