- 1 pound ground beef
- 1 onion, chopped
- 1 packet taco seasoning
- 1 cup water
- 2 cups cooked rice
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 cup shredded cheddar cheese
- Optional toppings: sour cream, salsa, avocado
Instructions
- Brown ground beef and onion in a skillet. Drain any grease.
- Stir in taco seasoning and water. Simmer for 5 minutes.
- Add cooked rice, black beans, and diced tomatoes. Mix well.
- Pour mixture into a baking dish.
- Top with shredded cheese.
- Bake at 350°F (175°C) for 20 minutes, or until cheese is melted and bubbly.
- Let stand for a few minutes before serving.
- Add your favorite toppings.

- You can substitute ground turkey or chicken for ground beef.
- Add corn for extra sweetness and texture.
