Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 packet taco seasoning
  • 1 cup water
  • 2 cups cooked rice
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, salsa, avocado


Instructions

  1. Brown ground beef and onion in a skillet. Drain any grease.
  2. Stir in taco seasoning and water. Simmer for 5 minutes.
  3. Add cooked rice, black beans, and diced tomatoes. Mix well.
  4. Pour mixture into a baking dish.
  5. Top with shredded cheese.
  6. Bake at 350°F (175°C) for 20 minutes, or until cheese is melted and bubbly.
  7. Let stand for a few minutes before serving.
