- 1 pound ground beef
- 1 onion, chopped
- 1 packet taco seasoning
- 1 cup uncooked long-grain rice
- 2 cups beef broth
- 1 (15 ounce) can diced tomatoes, undrained
- 1 cup shredded cheddar cheese
- Toppings: sour cream, salsa, etc.
Instructions
- Brown ground beef and onion in a skillet. Drain any grease.
- Stir in taco seasoning and cook for 1 minute.
- Add rice, beef broth, and diced tomatoes.
- Bring to a boil, then reduce heat and simmer for 20 minutes, or until rice is cooked.
- Stir in cheese until melted.
- Serve with your favorite toppings.
Notes
- Adjust spice level by using mild or hot taco seasoning.
- Feel free to add other vegetables like bell peppers.
- For extra flavor, use a little bit of cumin.
