Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 head of broccoli, cut into florets
  • 1/2 cup teriyaki sauce (low sodium preferred)
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • Cooked rice, for serving
  • Sesame seeds, for garnish (optional)


Instructions

  1. In a bowl, whisk together the cornstarch and water. Set aside.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Add chicken and cook until browned, about 5-7 minutes.
  4. Add broccoli, garlic, and ginger to the skillet. Cook for 3-5 minutes, until broccoli is tender-crisp.
  5. Pour in teriyaki sauce and bring to a simmer.
  6. Stir in the cornstarch slurry and cook until sauce thickens, about 1-2 minutes.
  7. Serve over cooked rice and garnish with sesame seeds, if desired.
