A light and healthy Chicken & Broccoli Teriyaki Skillet recipe.
Ingredients

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 head of broccoli, cut into florets
- 1/2 cup teriyaki sauce (low sodium preferred)
- 1/4 cup water
- 1 tablespoon cornstarch
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- Cooked rice, for serving
- Sesame seeds, for garnish (optional)
Instructions
- In a bowl, whisk together the cornstarch and water. Set aside.
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add chicken and cook until browned, about 5-7 minutes.
- Add broccoli, garlic, and ginger to the skillet. Cook for 3-5 minutes, until broccoli is tender-crisp.
- Pour in teriyaki sauce and bring to a simmer.
- Stir in the cornstarch slurry and cook until sauce thickens, about 1-2 minutes.
- Serve over cooked rice and garnish with sesame seeds, if desired.
Notes
- For extra flavor, marinate the chicken in teriyaki sauce for 30 minutes before cooking.
- Add other vegetables like bell peppers or carrots.
- Use low-sodium teriyaki sauce to reduce sodium intake.
