Ingredients
- Cooked chicken, shredded
- Vegetable broth
- Onion, diced
- Carrots, diced
- Celery, diced
- Potatoes, diced
- Frozen peas
- Heavy cream
- Butter
- Flour

- Pie crust, for garnish (optional)
Instructions
- Sauté onion, carrots, and celery in butter.
- Add potatoes and cook for a few minutes.
- Sprinkle in flour and cook for 1 minute.
- Gradually whisk in vegetable broth.
- Add chicken, peas, thyme, salt, and pepper.
- Simmer until vegetables are tender.
- Stir in heavy cream.
- Serve, optionally garnished with pieces of baked pie crust.
