Ingredients

  • 200g ramen noodles
  • 200g boneless, skinless chicken breast, thinly sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 clove garlic, minced
  • 1/2 inch ginger, grated
  • 1 cup mixed stir-fry vegetables (e.g., broccoli florets, sliced carrots, bell peppers)
  • 1/4 cup chicken broth
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste


Instructions

  1. In a small bowl, toss the chicken slices with soy sauce and cornstarch. Set aside for 10 minutes.
  2. Cook ramen noodles according to package directions. Drain and rinse with cold water.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until browned and cooked through. Remove chicken from skillet and set aside.
  4. Add garlic and ginger to the skillet and stir-fry for 30 seconds until fragrant.
  5. Add mixed vegetables and stir-fry for 3-5 minutes until tender-crisp.
  6. Pour in chicken broth and oyster sauce. Bring to a simmer.
  7. Return the cooked chicken to the skillet. Add the cooked ramen noodles and toss to combine.
  8. Stir in sesame oil. Season with salt and pepper to taste.
  9. Serve immediately.
