A fast and healthy chicken ramen stir fry that’s perfect for a weeknight meal.
Ingredients

- 200g ramen noodles
- 200g boneless, skinless chicken breast, thinly sliced
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- 1 tablespoon vegetable oil
- 1 clove garlic, minced
- 1/2 inch ginger, grated
- 1 cup mixed stir-fry vegetables (e.g., broccoli florets, sliced carrots, bell peppers)
- 1/4 cup chicken broth
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- In a small bowl, toss the chicken slices with soy sauce and cornstarch. Set aside for 10 minutes.
- Cook ramen noodles according to package directions. Drain and rinse with cold water.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until browned and cooked through. Remove chicken from skillet and set aside.
- Add garlic and ginger to the skillet and stir-fry for 30 seconds until fragrant.
- Add mixed vegetables and stir-fry for 3-5 minutes until tender-crisp.
- Pour in chicken broth and oyster sauce. Bring to a simmer.
- Return the cooked chicken to the skillet. Add the cooked ramen noodles and toss to combine.
- Stir in sesame oil. Season with salt and pepper to taste.
- Serve immediately.
Notes
- You can substitute chicken with tofu for a vegetarian option.
- Add your favorite vegetables for variety.
- Adjust soy sauce and oyster sauce to your preference.
