Description

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1/2 cup milk
  • 1/2 cup chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 (6 ounce) box Stove Top stuffing mix for chicken
  • 1 1/2 cups water
  • 1 cup shredded cheddar cheese


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chicken pieces and cook until browned. Remove chicken from skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Stir in cream of chicken soup, milk, chicken broth, thyme, pepper, and salt. Bring to a simmer.
  5. In a separate bowl, prepare the stuffing mix according to package directions using the stuffing mix, water, and butter (if required by your specific brand).
  6. Return the cooked chicken to the skillet with the soup mixture. Stir to combine.
  7. Pour the chicken and soup mixture into a 9×13 inch baking dish.
  8. Spread the prepared stuffing evenly over the chicken mixture.
  9. Sprinkle shredded cheddar cheese over the stuffing.
  10. Bake for 20-25 minutes, or until bubbly and the stuffing is golden brown.
