Ingredients

- 1 cup heavy cream
- 12 ounces dark chocolate, chopped
- 1/2 cup fresh raspberries
- 2 tablespoons raspberry liqueur (optional)
- 1/4 cup unsweetened cocoa powder, for dusting
Instructions
- Heat the cream in a saucepan until simmering.
- Pour the hot cream over the chocolate. Let it sit for a minute, then stir until smooth.
- Gently fold in the raspberries and liqueur (if using).
- Refrigerate for at least 2 hours, or until firm.
- Scoop small portions and roll into balls.
- Dust with cocoa powder.
- Chill again before serving.

- Use high-quality chocolate for best flavor.
- For a smoother truffle, strain the raspberry puree.
- You can substitute other berries.
