Instructions

- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- In a small bowl, combine the 1/4 cup granulated sugar and 2 teaspoons of cinnamon.
- Spread half of the dough evenly into the prepared baking pan.
- Sprinkle half of the cinnamon sugar mixture over the dough.
- Dot the remaining dough over the cinnamon sugar layer, then spread it as evenly as possible.
- Sprinkle the remaining cinnamon sugar mixture over the top.
- Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Let the bars cool completely in the pan before cutting into squares.
