- 4 large onions, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 teaspoon sugar
- 8 cups beef broth
- 1/2 cup dry red wine
- 1 bay leaf
- Salt and pepper to taste
- French bread, sliced
- Gruyère cheese, grated
Instructions
- Caramelize the onions: Heat olive oil and butter in a large pot. Add onions and sugar. Cook, stirring occasionally, until deeply caramelized (about 45 minutes).
- Add broth and wine: Pour in beef broth and red wine. Add bay leaf. Season with salt and pepper.
- Simmer the soup: Bring to a simmer and cook for 30 minutes.
- Toast the bread: Toast French bread slices.
- Assemble the soup: Ladle soup into oven-safe bowls. Top with toasted bread and Gruyère cheese.
- Broil the soup: Broil until cheese is melted and bubbly.
- Serve: Serve hot.
Notes
- For a vegetarian version, use vegetable broth.
- You can add a splash of balsamic vinegar for extra depth of flavor.
