- 1 pound turkey Italian sausage
- 1 large onion, chopped
- 2 cloves garlic, minced
- 6 cups chicken broth
- 4 cups chopped kale
- 1/2 cup heavy cream
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- Brown the turkey sausage in a large pot.
- Add the onion and cook until softened.
- Stir in the garlic and cook for 1 minute.
- Pour in the chicken broth, kale, and red pepper flakes.
- Simmer for 15 minutes.
- Stir in the heavy cream.
- Season with salt and pepper.
- Serve hot.
Notes
- You can use ground turkey instead of sausage.
- Adjust the red pepper flakes to your spice preference.
- For a thicker soup, mash some of the potatoes before adding the cream.
