- 1 pound bowtie pasta
- 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 head of broccoli, cut into florets
- 1/2 cup cowboy butter (recipe below)
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Cowboy Butter Recipe:
- 1/2 cup (1 stick) unsalted butter, softened
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
- Cook pasta according to package directions.
- While pasta cooks, prepare cowboy butter by whisking all ingredients together.
- In a large skillet, cook chicken until browned and cooked through. Season with salt and pepper.
- Add broccoli florets to the skillet and cook until tender-crisp.
- Drain pasta and add it to the skillet with the chicken and broccoli.
- Pour in cowboy butter and toss to coat everything.
- Stir in Parmesan cheese.
- Serve immediately.
Notes
- Adjust cayenne pepper to your spice preference.
- You can add other vegetables, like bell peppers.
- Leftovers are great for lunch the next day.
