Ingredients

  • 1 pound Italian sausage, removed from casings
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 2 pounds Yukon Gold potatoes, peeled and diced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Brown the sausage in a large pot or Dutch oven. Drain any excess grease.
  2. Add olive oil, onion, carrots, and celery to the pot. Cook until softened.
  3. Stir in garlic, chicken broth, potatoes, oregano, and basil.
  4. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15-20 minutes).
  5. Season with salt and pepper.
  6. Garnish with fresh parsley before serving.
