- 1 pound Italian sausage, removed from casings
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 2 pounds Yukon Gold potatoes, peeled and diced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Brown the sausage in a large pot or Dutch oven. Drain any excess grease.
- Add olive oil, onion, carrots, and celery to the pot. Cook until softened.
- Stir in garlic, chicken broth, potatoes, oregano, and basil.
- Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15-20 minutes).
- Season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
- Adjust the amount of Italian sausage based on your preference.
- For a creamier soup, blend some of the soup before serving.
- You can add other vegetables, such as spinach or kale.
