- 1 tablespoon olive oil
- 1 cup chopped yellow onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrot
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups seafood or fish stock
- 1 cup heavy cream
- 1/2 pound cooked crab meat, picked over
- 1/2 pound cooked small shrimp, peeled and deveined
- 1/4 teaspoon cayenne pepper
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and carrot. Cook until softened, about 8-10 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in the flour and cook for 1-2 minutes, stirring constantly.
- Gradually whisk in the seafood stock until smooth. Bring to a simmer.
- Reduce heat to low, cover, and cook for 20 minutes to allow flavors to meld.
- Stir in the heavy cream, crab meat, shrimp, and cayenne pepper.
- Heat gently until warmed through. Do not boil.
- Season with salt and black pepper to taste.
- Ladle into bowls and garnish with fresh parsley.

- For a smoother bisque, you can blend it with an immersion blender before adding the crab and shrimp.
- Use good quality seafood stock for the best flavor.
- Adjust cayenne pepper to your spice preference.
