Description

A quick and easy cheesy breakfast casserole that’s perfect for any morning. This savory dish is full of flavor and incredibly satisfying.


Ingredients

  • 1 pound breakfast sausage
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (8 ounces) refrigerated crescent rolls


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown the breakfast sausage in a large skillet over medium heat. Drain off any excess grease.
  3. Add the chopped onion and bell pepper to the skillet and cook until softened, about 5-7 minutes.
  4. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  5. Stir in the shredded cheddar and Monterey Jack cheeses.
  6. Add the cooked sausage, onion, and bell pepper mixture to the egg mixture and stir to combine.
  7. Unroll the crescent rolls and press them into the bottom and up the sides of a 9×13 inch baking dish.
  8. Pour the egg mixture over the crescent roll crust.
  9. Bake for 30-40 minutes, or until the casserole is set and golden brown.
  10. Let cool slightly before serving.

Notes

  • For a spicier casserole, add a pinch of red pepper flakes to the egg mixture.
  • You can substitute other cheeses like Swiss or Gruyere.
  • This casserole can be made ahead and reheated.
