- 1 pound breakfast sausage
- 1 cup chopped onion
- 1 cup chopped bell pepper
- 6 large eggs
- 1 cup milk
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 can (8 ounces) refrigerated crescent rolls
Instructions
- Preheat oven to 375°F (190°C).
- Brown the breakfast sausage in a large skillet over medium heat. Drain off any excess grease.
- Add the chopped onion and bell pepper to the skillet and cook until softened, about 5-7 minutes.
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- Stir in the shredded cheddar and Monterey Jack cheeses.
- Add the cooked sausage, onion, and bell pepper mixture to the egg mixture and stir to combine.
- Unroll the crescent rolls and press them into the bottom and up the sides of a 9×13 inch baking dish.
- Pour the egg mixture over the crescent roll crust.
- Bake for 30-40 minutes, or until the casserole is set and golden brown.
- Let cool slightly before serving.
Notes
- For a spicier casserole, add a pinch of red pepper flakes to the egg mixture.
- You can substitute other cheeses like Swiss or Gruyere.
- This casserole can be made ahead and reheated.
