Description

Delicious and easy cranberry bars made with fresh cranberries and a simple flour mixture.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh cranberries, roughly chopped


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped fresh cranberries.
  7. Pour the batter evenly into the prepared baking pan.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bars cool completely in the pan before cutting into squares.

Notes

  • You can use leftover cranberry sauce instead of fresh cranberries. If using sauce, reduce the sugar in the batter by 1/4 cup.
  • Add a sprinkle of powdered sugar on top after cooling for extra sweetness and decoration.
