Delicious and easy cranberry bars made with fresh cranberries and a simple flour mixture.

- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups fresh cranberries, roughly chopped
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped fresh cranberries.
- Pour the batter evenly into the prepared baking pan.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bars cool completely in the pan before cutting into squares.
Notes
- You can use leftover cranberry sauce instead of fresh cranberries. If using sauce, reduce the sugar in the batter by 1/4 cup.
- Add a sprinkle of powdered sugar on top after cooling for extra sweetness and decoration.
