Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 4 ounces goat cheese, softened
  • 1/2 cup chopped pecans, divided
  • 1/4 cup dried cranberries
  • 2 tablespoons chopped fresh parsley
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Crackers, for serving

Instructions

  1. In a medium bowl, combine the softened cream cheese and goat cheese. Mix until well combined.
  2. Stir in 1/4 cup of the chopped pecans, dried cranberries, fresh parsley, minced garlic, salt, and pepper.
  3. Mix until all ingredients are evenly distributed.
  4. Place the cheese mixture on a piece of plastic wrap. Shape it into a ball.
  5. Roll the cheese ball in the remaining 1/4 cup of chopped pecans to coat evenly.
  6. Wrap the cheese ball tightly in plastic wrap and refrigerate for at least 1 hour to firm up.
  7. Before serving, unwrap the cheese ball and place it on a serving platter. Serve with crackers.

Notes

  • For a smoother texture, ensure both cream cheese and goat cheese are fully softened.
  • You can toast the pecans before chopping for a deeper flavor.
  • Other nuts like walnuts or almonds can be substituted for pecans.
  • Add a pinch of cayenne pepper for a hint of spice.
  • Garnish with extra cranberries or parsley if desired.
