Description
A delicious one-pot creamy Cajun chicken orzo dinner.
Ingredients

- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tsp Cajun seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 cup orzo pasta
- 4 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Season chicken with Cajun seasoning, salt, and pepper.
- Add chicken to the pot and cook until browned on all sides. Remove chicken from pot and set aside.
- Add onion and bell pepper to the pot and cook until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute more.
- Add orzo pasta and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes, or until orzo is cooked.
- Stir in heavy cream and Parmesan cheese. Add the chicken back to the pot and heat through.
- Garnish with fresh parsley and serve.
Notes
- Adjust the amount of Cajun seasoning to your taste.
- You can add other vegetables, such as mushrooms or zucchini.
- For a spicier dish, add a pinch of cayenne pepper.
