Description

A delicious and easy creamy Cajun chicken skillet without pasta.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Season chicken with Cajun seasoning, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Cook chicken until browned and cooked through. Set aside.
  4. Add bell peppers and onion to the skillet; cook until softened.
  5. Add garlic; cook for 1 minute.
  6. Pour in chicken broth and bring to a simmer.
  7. Stir in heavy cream and Parmesan cheese.
  8. Return chicken to the skillet.
  9. Simmer until sauce thickens.
  10. Garnish with parsley.
  11. Serve.

Notes

  • You can add cooked rice or cauliflower rice to the skillet.
  • Adjust the amount of Cajun seasoning to your taste.
  • For a spicier dish, add a pinch of cayenne pepper.
