Ingredients

- 2 boneless, skinless chicken breasts
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season chicken with Cajun seasoning, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Cook chicken until browned and cooked through. Set aside.
- Add bell peppers and onion to the skillet; cook until softened.
- Add garlic; cook for 1 minute.
- Pour in chicken broth and bring to a simmer.
- Stir in heavy cream and Parmesan cheese.
- Return chicken to the skillet.
- Simmer until sauce thickens.
- Garnish with parsley.
- Serve.
Notes
- You can add cooked rice or cauliflower rice to the skillet.
- Adjust the amount of Cajun seasoning to your taste.
- For a spicier dish, add a pinch of cayenne pepper.
