Ingredients

  • Cooked Chicken (2 cups)
  • Enchilada Sauce (1 jar)
  • Corn Tortillas (12)
  • Sour Cream (1 cup)
  • Shredded Cheese (2 cups)
  • Onion (1, chopped)
  • Taco Seasoning (2 tbsp)
  • Olive Oil (1 tbsp)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté onion in olive oil until softened.
  3. Add cooked chicken and taco seasoning. Stir well.
  4. In a baking dish, layer tortillas, chicken mixture, enchilada sauce, and cheese.
  5. Repeat layers.
  6. Top with remaining cheese.
  7. Bake for 20-25 minutes, or until bubbly and cheese is melted.
  8. Let cool slightly before serving.

  • You can use rotisserie chicken to save time.
