A simple and delicious Creamy Chicken Enchilada Casserole. No rolling required!
Ingredients
- Cooked Chicken (2 cups)
- Enchilada Sauce (1 jar)
- Corn Tortillas (12)
- Sour Cream (1 cup)
- Shredded Cheese (2 cups)
- Onion (1, chopped)
- Taco Seasoning (2 tbsp)
- Olive Oil (1 tbsp)
Instructions
- Preheat the oven to 375°F (190°C).
- Sauté onion in olive oil until softened.
- Add cooked chicken and taco seasoning. Stir well.
- In a baking dish, layer tortillas, chicken mixture, enchilada sauce, and cheese.
- Repeat layers.
- Top with remaining cheese.
- Bake for 20-25 minutes, or until bubbly and cheese is melted.
- Let cool slightly before serving.
Notes
- You can use rotisserie chicken to save time.
- Feel free to add black beans or corn.
- Garnish with sour cream, cilantro, and your favorite toppings.
