- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 8 ounces cremini mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup orzo pasta
- 3 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned.
- Add mushrooms and onion, cook until softened.
- Stir in garlic, thyme, salt, and pepper. Cook for 1 minute.
- Add orzo and chicken broth. Bring to a boil, then reduce heat and simmer until orzo is cooked (about 15 minutes).
- Stir in heavy cream and Parmesan cheese. Cook until heated through.
- Garnish with fresh parsley.
Notes
- You can substitute other types of mushrooms.
- Adjust seasonings to your preference.
- For a thicker sauce, simmer uncovered for a few minutes.
