Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 8 ounces cremini mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned.
  3. Add mushrooms and onion, cook until softened.
  4. Stir in garlic, thyme, salt, and pepper. Cook for 1 minute.
  5. Add orzo and chicken broth. Bring to a boil, then reduce heat and simmer until orzo is cooked (about 15 minutes).
  6. Stir in heavy cream and Parmesan cheese. Cook until heated through.
  7. Garnish with fresh parsley.

Notes

  • You can substitute other types of mushrooms.
