- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup milk or heavy cream
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned. Season with salt and pepper.
- Add onion and cook until softened. Stir in garlic.
- Add rice and cook for 1 minute, stirring constantly.
- Pour in chicken broth. Bring to a boil, then reduce heat and simmer, covered, for 15 minutes.
- Stir in milk or cream and cheese. Cook until cheese is melted and sauce has thickened.
- Season with more salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- You can substitute other vegetables like bell peppers or mushrooms.
- Adjust cooking time for rice as needed.
