Description

A simple one-pan Creamy Chicken & Rice Skillet, perfect for a quick and easy weeknight dinner.


Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup milk or heavy cream
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned. Season with salt and pepper.
  3. Add onion and cook until softened. Stir in garlic.
  4. Add rice and cook for 1 minute, stirring constantly.
  5. Pour in chicken broth. Bring to a boil, then reduce heat and simmer, covered, for 15 minutes.
  6. Stir in milk or cream and cheese. Cook until cheese is melted and sauce has thickened.
  7. Season with more salt and pepper to taste.
  8. Garnish with fresh parsley before serving.
