Description
A comforting and light chicken and spinach bake. It’s easy to make and perfect for a weeknight meal.
Ingredients
- Chicken breasts: 2 (about 8 oz each)
- Fresh spinach: 5 oz
- Heavy cream: 1/2 cup
- Grated Parmesan cheese: 1/4 cup
- Garlic: 2 cloves, minced
- Olive oil: 1 tbsp
- Salt and pepper: To taste
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium heat.
- Sear chicken breasts for 2-3 minutes per side.
- Add minced garlic and cook for 30 seconds.
- Add spinach and cook until wilted.
- Pour in heavy cream and stir.
- Sprinkle with Parmesan cheese.
- Bake for 20-25 minutes, or until chicken is cooked through.
- Let it rest for a few minutes before serving.
Notes
- You can add other vegetables, like mushrooms or bell peppers.
- For a thicker sauce, simmer the cream for a few minutes.
- Serve with a side salad or steamed vegetables.
