A simple and delicious one-pan meal featuring creamy chicken, spinach, and orzo pasta.

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup orzo pasta
- 5 ounces fresh spinach
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken with salt and pepper.
- Cook chicken until browned.
- Add onion and cook until softened.
- Stir in garlic. Cook for 30 seconds.
- Pour in chicken broth and bring to a boil.
- Add orzo pasta. Cook for 7-9 minutes, until pasta is tender.
- Stir in spinach until wilted.
- Remove from heat. Stir in heavy cream and Parmesan cheese.
- Serve immediately.
Notes
- You can substitute chicken thighs for chicken breasts.
- Add more or less spinach to your liking.
- For a spicier dish, add a pinch of red pepper flakes.
