This one-pan creamy coconut chicken recipe is easy to make.


Ingredients

  • 1.5 lbs chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (13.5 ounce) can coconut milk
  • 1 cup chicken broth
  • 1 tbsp curry powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped cilantro, for garnish


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat.
  3. Add chicken and cook until browned.
  4. Add onion and bell pepper; cook until softened.
  5. Stir in garlic, coconut milk, chicken broth, curry powder, salt, and pepper.
  6. Bring to a simmer.
  7. Bake in the preheated oven for 20-25 minutes, or until chicken is cooked through.
  8. Garnish with cilantro and serve.
