This one-pan creamy coconut chicken recipe is easy to make.

- 1.5 lbs chicken breasts, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 (13.5 ounce) can coconut milk
- 1 cup chicken broth
- 1 tbsp curry powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup chopped cilantro, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Heat olive oil in a large oven-safe skillet over medium heat.
- Add chicken and cook until browned.
- Add onion and bell pepper; cook until softened.
- Stir in garlic, coconut milk, chicken broth, curry powder, salt, and pepper.
- Bring to a simmer.
- Bake in the preheated oven for 20-25 minutes, or until chicken is cooked through.
- Garnish with cilantro and serve.
Notes
- Serve with rice or your favorite side dish.
- Adjust the amount of curry powder to your taste.
- For extra flavor, add a squeeze of lime juice before serving.
