A hearty and flavorful Creamy Cowboy Soup perfect for a cold day.


Ingredients

Scale
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can corn, drained
  • 4 cups beef broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup heavy cream
  • Optional toppings: shredded cheese, sour cream, green onions


Instructions

  1. Brown ground beef in a large pot or Dutch oven. Drain off any excess grease.
  2. Add onion and garlic to the pot and cook until softened.
  3. Stir in black beans, pinto beans, diced tomatoes, corn, beef broth, chili powder, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in heavy cream.
  6. Heat through, but do not boil.
  7. Serve hot, with desired toppings.

Notes

  • Adjust spices to your taste.
  • For a thicker soup, mash some of the beans.
