A hearty and flavorful Creamy Cowboy Soup perfect for a cold day.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can pinto beans, rinsed and drained
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can corn, drained
- 4 cups beef broth
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1 cup heavy cream
- Optional toppings: shredded cheese, sour cream, green onions
Instructions
- Brown ground beef in a large pot or Dutch oven. Drain off any excess grease.
- Add onion and garlic to the pot and cook until softened.
- Stir in black beans, pinto beans, diced tomatoes, corn, beef broth, chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in heavy cream.
- Heat through, but do not boil.
- Serve hot, with desired toppings.
Notes
- Adjust spices to your taste.
- For a thicker soup, mash some of the beans.
- You can use different types of beans.
