Description

A delicious and easy one-pot creamy French onion chicken and orzo dinner.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup orzo pasta
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Freshly chopped parsley for garnish


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Season chicken with salt and pepper.
  3. Add chicken to the pot and cook until browned on all sides. Remove and set aside.
  4. Add onion to the pot and cook until softened and caramelized, about 8-10 minutes.
  5. Stir in garlic and cook for 1 minute.
  6. Pour in chicken broth and bring to a boil.
  7. Add orzo pasta and cook according to package directions.
  8. Stir in heavy cream and Parmesan cheese.
  9. Return chicken to the pot and heat through.
  10. Season with salt and pepper to taste.
  11. Garnish with fresh parsley.

  • You can add a bay leaf while cooking the onions for extra flavor.
