Description

Ingredients

  • 1.5 lbs large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper to taste
  • 2 lbs potatoes, peeled and quartered
  • 1/2 cup milk
  • 4 tbsp butter
  • Salt and pepper to taste


Instructions

  1. Boil potatoes in salted water until tender. Drain and mash with milk and butter until smooth. Season with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and cook until fragrant, about 1 minute.
  4. Add shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side.
  5. Remove shrimp from skillet and set aside.
  6. Pour heavy cream and chicken broth into the skillet. Bring to a simmer and cook until slightly thickened.
  7. Stir in Parmesan cheese and chopped parsley. Season with salt and pepper.
  8. Return shrimp to the skillet and toss to coat in the sauce.
  9. Serve the creamy garlic shrimp over mashed potatoes.
