Ingredients

  • Carrots: 1 kg, peeled and chopped
  • Onion: 1, chopped
  • Garlic: 2 cloves, minced
  • Ginger: 1 tbsp, grated
  • Coconut Milk: 400ml
  • Vegetable Broth: 1 liter
  • Olive Oil: 1 tbsp
  • Salt: to taste
  • Pepper: to taste
  • Cilantro: for garnish


Instructions

  1. Sauté onion in olive oil until softened.
  2. Add garlic and ginger; cook for a minute.
  3. Add carrots and cook for 5 minutes.
  4. Pour in vegetable broth and simmer until carrots are tender.
  5. Blend the soup until smooth.
  6. Stir in coconut milk. Season with salt and pepper.
  7. Garnish with cilantro.
