Ingredients
- Carrots: 1 kg, peeled and chopped
- Onion: 1, chopped
- Garlic: 2 cloves, minced
- Ginger: 1 tbsp, grated
- Coconut Milk: 400ml
- Vegetable Broth: 1 liter
- Olive Oil: 1 tbsp
- Salt: to taste
- Pepper: to taste
- Cilantro: for garnish
Instructions
- Sauté onion in olive oil until softened.
- Add garlic and ginger; cook for a minute.
- Add carrots and cook for 5 minutes.
- Pour in vegetable broth and simmer until carrots are tender.
- Blend the soup until smooth.
- Stir in coconut milk. Season with salt and pepper.
- Garnish with cilantro.
Notes
- Adjust ginger based on your preference.
- You can add a pinch of red pepper flakes for heat.
