Description
A simple, creamy chicken and rice dish cooked in one pan.
Ingredients

- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup milk or cream
- 1/2 cup frozen peas
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet or pot over medium-high heat.
- Add chicken and cook until browned.
- Add onion and garlic; cook until softened.
- Stir in rice, chicken broth, milk or cream, salt, and pepper.
- Bring to a boil, then reduce heat and simmer, covered, for 15-20 minutes, or until rice is cooked and liquid is absorbed.
- Stir in peas and heat through.
- Garnish with fresh parsley.
Notes
- You can add other vegetables like carrots or mushrooms.
- Adjust the cooking time based on your rice type.
- For extra flavor, use a bay leaf while cooking.
