Description

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup milk or cream
  • 1/2 cup frozen peas
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large skillet or pot over medium-high heat.
  2. Add chicken and cook until browned.
  3. Add onion and garlic; cook until softened.
  4. Stir in rice, chicken broth, milk or cream, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer, covered, for 15-20 minutes, or until rice is cooked and liquid is absorbed.
  6. Stir in peas and heat through.
  7. Garnish with fresh parsley.
