- 1 can (15 ounces) chickpeas, rinsed and drained
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 4 large whole wheat tortillas
- 2 cups chopped kale
- 1/2 cup Caesar dressing (light)
- 1/4 cup grated Parmesan cheese
- Optional: Cherry tomatoes, sliced
Instructions
- Preheat oven to 400°F (200°C).
- Toss chickpeas with olive oil, smoked paprika, garlic powder, salt, and pepper on a baking sheet.
- Roast chickpeas for 15-20 minutes, or until crispy.
- In a bowl, combine chopped kale with light Caesar dressing and Parmesan cheese. Massage the dressing into the kale until it is softened.
- Warm the tortillas slightly.
- Assemble the wraps by filling each tortilla with the dressed kale and crispy chickpeas. Add cherry tomatoes if desired.
- Fold or roll the wraps.
Notes
- For extra crispiness, pat the chickpeas very dry before roasting.
- You can make the crispy chickpeas ahead of time and store them in an airtight container.
