- 6 cups peeled and cubed potatoes
- 1 onion, chopped
- 4 cups chicken broth
- 8 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/2 cup sour cream
- Salt and pepper to taste
- Optional toppings: green onions, more cheese, bacon bits
Instructions
- Place potatoes, onion, and chicken broth in the crock pot.
- Cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are tender.
- In the last 30 minutes, stir in cream cheese until melted.
- Stir in cheddar cheese, bacon, and sour cream.
- Season with salt and pepper.
- Serve hot with your favorite toppings.
