Ingredients

- 1.5 lbs boneless, skinless chicken breasts
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups frozen corn
- 2 cups potatoes, diced
- 1 cup milk or heavy cream
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
- Optional: chives for garnish
Instructions
- Place chicken breasts in the Crockpot.
- Add onion, garlic, chicken broth, corn, and potatoes.
- Season with salt and pepper.
- Cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
- Shred the chicken with two forks.
- Stir in milk or cream and cheese.
- Cook for another 15-30 minutes, until heated through.
- Garnish with chives, if desired.
- Serve hot and enjoy your chowder!

- You can add other vegetables like carrots or celery.
- For a thicker chowder, mash some of the potatoes.
