Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups frozen corn
  • 2 cups potatoes, diced
  • 1 cup milk or heavy cream
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: chives for garnish


Instructions

  1. Place chicken breasts in the Crockpot.
  2. Add onion, garlic, chicken broth, corn, and potatoes.
  3. Season with salt and pepper.
  4. Cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
  5. Shred the chicken with two forks.
  6. Stir in milk or cream and cheese.
  7. Cook for another 15-30 minutes, until heated through.
  8. Garnish with chives, if desired.
