A creamy and comforting crockpot chicken corn chowder. This slow cooker recipe is easy to make and perfect for a hearty meal.

- 2 boneless, skinless chicken breasts
- 1 cup chopped celery
- 1 cup chopped onion
- 4 cups chicken broth
- 2 (15 ounce) cans corn, drained
- 1 (10 ounce) can diced tomatoes with green chilies, undrained
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried thyme
- 1 cup milk
- 1/4 cup all-purpose flour
- 2 tablespoons butter
Instructions
- Place chicken breasts in your slow cooker.
- Add celery, onion, chicken broth, corn, diced tomatoes with green chilies, salt, pepper, garlic powder, and thyme.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove chicken and shred. Return chicken to the slow cooker.
- In a small bowl, whisk together milk and flour until smooth.
- Stir the milk mixture into the slow cooker.
- Add butter.
- Cook on high for another 30 minutes, or until the chowder has thickened.
Notes
- For a thicker chowder, use an extra tablespoon of flour mixed with milk.
- Garnish with chopped fresh parsley if desired.
- This chowder freezes well.
