Description

A creamy and comforting crockpot chicken corn chowder. This slow cooker recipe is easy to make and perfect for a hearty meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 4 cups chicken broth
  • 2 (15 ounce) cans corn, drained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried thyme
  • 1 cup milk
  • 1/4 cup all-purpose flour
  • 2 tablespoons butter


Instructions

  1. Place chicken breasts in your slow cooker.
  2. Add celery, onion, chicken broth, corn, diced tomatoes with green chilies, salt, pepper, garlic powder, and thyme.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Remove chicken and shred. Return chicken to the slow cooker.
  5. In a small bowl, whisk together milk and flour until smooth.
  6. Stir the milk mixture into the slow cooker.
  7. Add butter.
  8. Cook on high for another 30 minutes, or until the chowder has thickened.

Notes

  • For a thicker chowder, use an extra tablespoon of flour mixed with milk.
  • Garnish with chopped fresh parsley if desired.
  • This chowder freezes well.
