A comforting and easy-to-make Crockpot Chicken Gnocchi Soup.

- 1 lb boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 (10 ounce) package gnocchi
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Place chicken breasts in the crockpot.
- Add chicken broth, onion, carrots, celery, garlic, thyme, salt, and pepper.
- Cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
- Remove chicken from crockpot and shred.
- Add gnocchi to the crockpot. Cook for about 20 minutes, or until gnocchi is tender.
- Stir in shredded chicken, heavy cream, and Parmesan cheese.
- Heat through.
- Garnish with fresh parsley.
Notes
- You can add other vegetables like spinach or kale.
- Adjust seasonings to your taste.
- For a thicker soup, you can mash some of the vegetables.
