Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 (10 ounce) package gnocchi
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Place chicken breasts in the crockpot.
  2. Add chicken broth, onion, carrots, celery, garlic, thyme, salt, and pepper.
  3. Cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
  4. Remove chicken from crockpot and shred.
  5. Add gnocchi to the crockpot. Cook for about 20 minutes, or until gnocchi is tender.
  6. Stir in shredded chicken, heavy cream, and Parmesan cheese.
  7. Heat through.
  8. Garnish with fresh parsley.

Notes

  • You can add other vegetables like spinach or kale.
  • Adjust seasonings to your taste.
  • For a thicker soup, you can mash some of the vegetables.
